Three Cheese Chicken Alfredo Bake

This is an amazing recipe from Pinterest that my sister-in-law made for her daughter's baptism brunch. It makes quite a bit and was so, so yummy! Now it's a regular meal in our home, hubby's request :)

Ingredients:
~ 1 (16 ounce) box Penne pasta noodles
~ 2 (10 ounce) containers Alfredo sauce
~ 1 cup sour cream
~ 1 (15 ounce) container Ricotta cheese
~ 2 cloves of garlic, minced (I just use garlic powder)
~ 2 cups cooked, diced chicken
~ 1/4 cup grated Parmesan cheese
~ 2 teaspoons dried Parsley
~ 1 teaspoon Italian seasoning
~ 2 cups shredded Mozzarella cheese

Directions:
Boil Penne pasta in a large pot of water, according to package directions. Drain water, and then return pasta to pot. Add all the remaining ingredients, except for the mozzarella cheese. Stir together to combine and then pour mixture into a greased 9x13 baking dish. Sprinkle the top evenly with the mozzarella cheese.

Bake at 350 degrees F. for 30 minutes, or until hot and bubbly. Enjoy ♥

Creamy Chicken & Bow-ties

This is one of those yummy, simple meals that's a hit with kids and men...my kind of meal!

Ingredients:
~ 1/2 box bow-tie pasta, cooked according to pkg directions
~ 2 small cans cream of chicken soup
~ 4 chicken breasts, cubed
~ cheese (any, we use cheddar)
~ tortilla chips (any would work, we also used Doritos and Sunchips out of desperation, but tortilla is our fav.)

Directions: In a large skillet, cook and season chicken. I season with Mrs. Dash, garlic, and Organic No Salt Seasoning from Costco. Add cream of chicken soup and cooked noodles to skillet with chicken. Mix well. Top with shredded cheese. Just before serving, top with broken up tortilla chips. We serve the tortilla chips on the side so everyone can dish them up themselves. Enjoy!

Artichoke Bowtie Pasta

This is a great side dish that is always a hit.


Ingredients:
~ 1 box bowtie pasta
~ 2 cans artichokes, smashed or cut into pieces (more if you'd like)
~ 1 can olives, halved
~ Caesar dressing (I recommend Cardini's...plastic bottle w/ green label)
~ Fresh Grated Parmesan cheese

Directions:
Cook noodles according to package directions. Toss all ingredients, coating well with plenty of dressing. (As this salad sits, the noodles will absorb the dressing so wait to pour on dressing until just before serving. If you have leftovers, just refrigerate and add a little more dressing before serving agian.)

Just Spaghetti

With all of the fancy spaghetti recipes out there, this is one of our favorites. Especially coming home late and in need of a quick dinner, or coming home from church on Sunday and wanting something quick but satisfying before crashing for your Sunday nap!! It's really "just spaghetti" in that there's nothing unique about it.



Ingredients:
~ 1 can spaghetti sauce (the kind that comes in the metal can, either Del Monte or Hunts)
~ Noodles, just about any...reg. spaghetti is our fav. (whole wheat for us, of course)
~ Ground Beef/Turkey OR Costco's Italian Style meatballs
~ Cheddar cheese (optional)

Directions:
Cook noodles according to pkg directions. Cook meat in a skillet and season OR cook meatballs according to package directions. (We microwave the meatballs to make it quick and less clean-up.) Heat sauce in a saucepan or in a bowl in the microwave. On serving plates: place noodles, top with sauce & meatballs and sprinkle with cheese. We think french bread is a must w/ this meal!

Chicken Stroganoff Bake


Ingredients:
~ Wide egg noodles
~ 2-3 chicken breasts
~ Cheddar Cheese
~ Sliced olives (optional)
~ 1 can cream o' mushroom soup
~ almost 1 small container sour cream

Directions:
Season chicken with salt and pepper and fry in a little olive oil until cooked through; add soup, about 1 c. cheese, olives and sour cream and mix well. Cook noodles according to package directions, add to mixture. Spoon mixture into a casserole dish, top with additional cheese and bake at 350 degrees until cheese is bubbly and casserole is heated through.

Pretty Penne Ham Skillet

Ingredients:
~ 1 lb uncooked penne pasta
~ 3 c. fully cooked ham, cubed
~ 1 large red pepper, diced
~ 1 med. yellow onion, chopped
~ 1/4 c. fresh minced parsley (or dried)
~ 2 garlic cloves, minced OR 1/4 tsp. powder
~ 1/2 tsp basil
~ 1/2 tsp oregano
~ 1/4 c. olive oil
~ 3 T butter
~ 1 can chicken broth
~ 1 T lemon juice
~ 1/2 c. shredded Parmesan

Directions:
Cook pasta. Meanwhile, in large skillet, saute veggies, ham and seasoning in oil and butter for 4-6 minutes until ham is brown and veggies are tender. Stir in broth and lemon juice. Bring to boil. Reduce heat, simmer uncovered 10-15 minutes or until liquid is reduced by half. Drain pasta and stir into mixture. Sprinkle with Parmesan cheese.

T.V. Pasta Side Dish

Ingredients:
~ Angel hair pasta
~ 1/2 c. cottage cheese
~ 1/2 c. sour cream
~ grated onion
~ dash Worcestershire sauce
~ 1/4 c. Parmesan cheese
~ salt
~ mozzarella cheese

Directions:
Cook noodles according to package directions. Mix remaining ingredients and pour over noodles. Place in baking dish, top with cheese and bake at 350 degrees for 20 minutes or until cheese is brown and bubbly.

Cheesy Chicken and Tomato Tortellini Toss

Ingredients:
~ 1 c. dried cheese filled tortellini
~ 3 c. broccoli florets
~ 1 T butter
~ 1 T flour
~ 1 c. milk
~ 4 oz. Swiss cheese, torn
~ 1 can diced garlic & oregano OR Italian style diced tomatoes, undrained
~ 1 c. chopped chicken, cooked

Directions:
Cook tortellini according to package directions. Drain and keep warm.

For sauce, in a medium saucepan melt the butter. Stir in flour. Add milk all at once. Cook and stir until thickened and bubbly. Add Swiss cheese and let melt. Add tomatoes, undrained. Stir in chicken. Pour over tortellini and top with broccoli.

Three Cheese Stuffed Shells

This is a yummy, healthy meal.


Ingredients:
~ 12 dried jumbo pasta shells
~ 1 beaten egg
~ 1 12oz low fat cottage cheese
~ 1/2 c. shredded mozzarella
~ 1/4 c. Parmesan
~ 2 T fresh parsley (I use dried)
~ 1/2 tsp dried oregano, crushed
~1 14oz can Italian style stewed tomatoes, cut up
~ 1 8oz can tomato sauce


Just out of the oven...



Directions:
Cook pasta 18 min., drain and cool of foil. Mix all other ingredients except stewed tomatoes and tomato sauce. Spoon into shells in baking dish. Mix stewed tomatoes and tomato sauce and pour over top. Bake, covered, at 350 degrees for 15 minutes. Uncover and bake an additional 15 minutes or until heated through.

Ham 'N' Noodle Hot Dish


Ingredients:
~ 3 T butter, divided
~ 1 c. milk
~ 1/2 tsp salt (optional)
~ 2 T flour
~ 1 c. shredded cheddar cheese
~ 2 c. diced fully cooked ham
~ 1 c. frozen peas, thawed
~ 1 1/2 c. medium noodles, cooked & drained (I use whole wheat)
~ 1/4 c. dry bread crumbs
~ 1/2 tsp dried parsley flakes

Directions:
In saucepan, melt 2 T butter. Stir in flour until smooth. Gradually add milk and bring to boil over med heat. Cook and stir for 2 minutes. Remove from heat and stir in cheese and salt until cheese is melted. Add the ham, noodles and peas. Pour into a greased 1 qt baking dish. Melt remaining butter; add bread crumbs and parsley. Sprinkle over casserole. Bake, uncovered, at 350 degrees for 30 minutes or until heated through.

Oriental Chicken Bowtie Salad

Ingredients:
~ 4 uncooked chicken breasts, cubed

Marinade and Dressing:
~ 1/4 c. rice vinegar
~ 1/4 c. vinegar
~ 1/2 c. soy sauce
~ 1/2 c. sugar
~ 1 tsp. sesame oil
Whisk ingredients until sugar dissolves. Marinade chicken overnight. Cook over med-high heat until done. Drain off excess marinade. Put in fridge to cool. Meanwhile, mix remaining ingredients:

~ 3/4 c. slivered almonds
~ 1/4 c. sesame seeds
~ 1/2 lb-ish bowtie pasta
~ 1 bunch green onions
~ 1 large or 2 small bags fresh spinach

Top with cooled chicken. ENJOY!

Shrimp & Broccoli with Pasta

Shrimp is considered fancy and expensive. I have it on rare occasions when I'm craving the succulent taste. This is a recipe from one of my magazines I tried for the first time and really liked it. It's creamy, delicious and pretty HEALTHY. You can't lose. It reminds me a lot of the "zucchini pasta" recipe I love (posted earlier). Great summertime dishes!



Ingredients:
~4-6 oz uncooked angel hair pasta (I use whole wheat, of course)
~1 lb uncooked large shrimp, peeled and deveined
~4 T Canola Oil
~2 bunches broccoli, cut into florets
~3 garlic cloves
~6 T butter, cubed
~6 T chicken broth
~2 T grated Parmesan cheese
~1/2 tsp salt
~1/4 tsp pepper

Directions:
Cook pasta according to package directions. Meanwhile, in a large skillet or wok, stir-fry shrimp in oil for 1-2 minutes or until shrimp turn pink. Remove with a slotted spoon and keep warm. Stir-fry broccoli in remaining oil for 3 min. Add garlic; stir-fry 2 min. longer or until veggies are crisp-tender. Add butter, wine, cheese, salt and pepper. Drain pasta; add to skillet. Stir in shrimp; heat through. Serves 3-4

Tiff's Own - Spaghetti Bake

Yesterday I was in a mad rush for dinner...and this was the result. A scrumptious spaghetti bake!! I made it again tonight for another family and it makes a TON! It ended up making enough for a family of 5 as well as 2 smaller dishes, one for my mom and James and one for my little fam. I'm sure you could freeze half for another meal later on. My mom asked me to please put it online so she can make it again soon. YUM!

Ingredients:
~ 2 1/2 cups dry noodles (I love capelletti from Costso 3 pack, can use any small noodle, I'm sure)
~ 1 lb. ground beef or turkey (I use turkey)
~ 20 Italian meatballs (from Costco frozen section)
~ 2 large cans spaghetti sauce (I use cheap $.88/can)
~ 1 cup mozzarella
~ about 1/4 cup shredded or grated Parmesan

Directions:
Cook noodles according to package directions. Meanwhile, bake meatballs according to package directions. In a large frying pan, cook beef or turkey. Add sauce, mozzarella, Parmesan, baked meatballs and cooked noodles. Stir well. Pour into a baking dish, I use a really deep pie-shaped dish. Top with additional mozzarella and sprinkle with a little Parmesan and parsley flakes (optional- for looks). Bake at 350 degrees until sauce is bubbly and cheese is melted. ENJOY!

Zucchini Pasta - Healthy and DELICIOUS!!

This is my new favorite recipe. It's a "Healthy Cooking" recipe. I made it two days in a row last week and I'm making it again today. YUM! You'd never know the noodles are whole wheat and the taste of this rich and creamy dish will have you convinced it's not lower in fat, but it is! Quick and easy to make too!


Ingredients:
~ 8 oz uncooked whole wheat linguine
~ 4 cups coarsely shredded zucchini (about 3 medium)
~ 4 tsp. olive oil
~ 2 garlic cloves, minced
~ 1/2 cup fat-free plain yogurt
~ 3/4 cup shredded reduced-fat cheddar cheese
~ 3/4 tsp salt
~ 1/4 tsp pepper

Directions:
Cook linguine according to package directions. Pat zucchini dry and saute in oil for 2 minutes. Add garlic; saute 1-2 min. longer or until zucchini is tender. Transfer to a large bowl. Add the yogurt, cheese, salt and pepper. Drain linguine; add to zucchini mixture and toss to coat. Serve with a pinch of cheese on top.

Fantastic Lasagna (No Ricatta)

This is a recipe I came up with using some of the basics from my Mom’s easy lasagna recipe. Shawn has labeled this the “perfect” lasagna! VERY YUMMY!



Ingredients:
~9 lasagna noodles
~½ lb hamburger, cooked and seasoned
~½ lb sausage (any), cooked (OR TOTAL OF 1 LB HAMBURGER)
~2 large cans spaghetti sauce
~4 eggs
~1 cup dehydrated parmesan cheese
~Cheddar cheese
~Grated mozzarella (I’ve used all cheddar and it was great too)

Directions: Cook noodles and lay out on saran wrap, foil, or parchment paper to cool. In a skillet, place hamburger meat and season. Then add sausage. Cook through and add spaghetti sauce; warm. In a small bowl, beat eggs & parmesan cheese. Cover the bottom of a 9x13 pan with a small amount of the spaghetti sauce/meat mixture.
Layers: Lay 3 lasagna noodles over on bottom of pan (over sauce), 1/3 egg/parmesan mixture, 1/3 of the spaghetti/meat mixture, sprinkle with cheddar cheese. Repeat layers 3 times. Top with mozzarella cheese.

TIP: You can sprinkle parsley on top of anything topped with cheese and it adds a colorful, elegant look. Bake 350 degrees for about 45 minutes. Don’t let the cheese get hard and yucky. This is great with French bread!

Simple & Delicious Chicken Fetuccini Alfredo

This is a super easy recipe our family loves! I always make it with half white noodles, half spinach noodles. It’s prettier, healthier, and you can’t taste the difference at all. (I didn’t have spinach noodles when I took the pic for this recipe). For Shawn, I just dish up the noodles, sauce and chicken and for the rest of the fam I top with the yummy extras.




Ingredients:
• Fettuccini Noodles (all regular or a combination of regular & spinach)
• Alfredo sauce (jarred or a sauce packet, made to package directions)
• Chicken breasts, cubed or cut into strips
Optional:
• Broccoli (I think this is a must!)
• Mushrooms
• Olives
• Artichoke Hearts

Directions:
Cook noodles according to package directions. Cook chicken fully, then pour the alfredo sauce into the pan with the chicken and heat through. Drain noodles and add to chicken and sauce. Spoon into a serving dish. Top with optional vegetables. (TIP: The noodles should be VERY, VERY saucy/soupy! I can’t stress this enough! The noodles will absorb the sauce and become dry otherwise. I wouldn’t worry at all that there’s too much sauce, just too little). Serve & Enjoy!

Hamburger Macaroni Casserole (quick n' easy)

This is a super fast and easy recipe for those nights you come home and think…what’s for dinner? It’s more of a kid pleaser than anything else but, Shawn LOVES it! I also always have these ingredients in my food storage, which is awesome! I even have canned ground beef from the cannery! This is truly a "food storage" meal!! Shawn also calls this one "hamburger helper...but better!)


Ingredients:
• 1 lb ground beef or turkey
• 1 can tomato soup
• 1 can cream o’ chicken soup
• 2-3 c. shredded cheddar cheese
• 1 small pkg. pasta (elbow works well)
• Corn (optional or just on the side)

Directions:
Boil noodles until soft. While waiting for noodles to cook, brown hamburger and drain grease. Add cream o' chicken soup & tomato soup to meat. Stir until blended. Drain corn and add to hamburger mixture. Add noodles. Cook until heated through. You can transfer to baking dish, top w/ cheese, & bake at 350 until cheese is melted & bubbly if you'd like.
